Guilt-Free Pancakes

Sugar-free, gluten-free, flour free pancakes.

Yeah, having a ripe banana at home is a great excuse to start mixing pancakes.

Why should you make this recipe? Because sometimes the only solution to all crises in the world is – pancakes. That’s why!

You need 3 things:
– 2 large eggs
– 1 whole banana
– Mixed berries of your choice, fresh or frozen, about a handful

Put the peeled banana in a bowl and start mashing it with a fork. Don’t be sorry, mash it! (If somehow you chose green banana instead of ripe one, you going to hate yourself. Also the fork is going to hate you.) When you finished mashing, add the eggs and stir until the mixture is about even.

For the last piece of your mixing act, feeling like the biggest chief in the world, make one swoop of the hand and add in your berries (Ratatouille much?) and mix a bit more.

Cook on medium heat, until golden brown on both sides, or a little bit less, or a bit more, who are we to tell the world biggest chef how to cook his pancakes.
